How to Activate Your Starter (Upon Arrival)
- Transfer to a large glass jar

Feed with:
- 100g flour
- 100g filtered, room-temperature water
- Stir well and loosely cover
- Let sit at room temperature for 6–12 hours until bubbly
Daily Maintenance & Care
Room Temperature (Regular Baking)
- Feed every 24 hours
- Ratio: 1:2:2 (starter : flour : water by weight)
Example:
50g starter + 100g flour + 100g water
Refrigerator Storage (Low Maintenance)
- Feed and rest 2–3 hours
- Refrigerate loosely covered
- Feed once weekly
Before Baking
- Remove from fridge
- Feed
- Use when doubled and bubbly
Best Practices
- Use filtered or spring water
- Use unbleached flour
- Keep jar loosely covered
- Ideal temperature: 70–78°F
- Discard before feeding to prevent overflow
