How to Activate Your Starter (Upon Arrival)

  1. Transfer to a large glass jar
  2. Feed with:
    • 100g flour
    • 100g filtered, room-temperature water
  3. Stir well and loosely cover
  4. Let sit at room temperature for 6–12 hours until bubbly

 

 

 

Daily Maintenance & Care

Room Temperature (Regular Baking)

  • Feed every 24 hours
  • Ratio: 1:2:2 (starter : flour : water by weight)

 

Example:

50g starter + 100g flour + 100g water

 

Refrigerator Storage (Low Maintenance)

  • Feed and rest 2–3 hours
  • Refrigerate loosely covered
  • Feed once weekly

 

 

Before Baking

  • Remove from fridge
  • Feed
  • Use when doubled and bubbly

 


 

 

Best Practices

  • Use filtered or spring water
  • Use unbleached flour
  • Keep jar loosely covered
  • Ideal temperature: 70–78°F
  • Discard before feeding to prevent overflow
